Prepare Your Favourite Snack at Home

Shawarma has become a widespread option for a quick snack on the streets of Europe. Originating from Egypt it combines fresh ingredients and wraps them up to a delicious package

Yoghurt Sauce

  • 260 g Greek yoghurt
  • 1 clove garlic , crushed
  • 1 tsp cumin
  • Squeeze of lemon juice
  • Salt and pepper

Marinade

  • 1 large garlic clove 
  • 2 tsp smoked paprika
  • 2 tsp salt
  • Black pepper
  • 2 tbsp lemon juice
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamon
  • 1 tsp ground cayenne pepper 
  • 3 tbsp olive oil

To serve

  • 4 – 5 flatbreads (Lebanese or pita bread orhomemade soft flatbreads)
  • Red onion , finely sliced
  • Sliced lettuce (cos or iceberg)
  • Tomato slices

Preperation

  • Prepare the chicken marinade by combining all the marinade ingredients in a large ziplock bag. Add the chicken to the bag, seal it, and gently massage the marinade onto each piece to ensure even coating. Allow the chicken to marinate for at least 3 hours, but ideally for 24 hours.
  • For the yogurt sauce, mix all the yogurt sauce ingredients in a bowl. Cover the bowl and refrigerate the sauce until needed. It can be kept in the fridge for up to 3 days.
  • To cook the chicken, preheat either a stove or a BBQ. If using a stove, heat a large non-stick skillet with 1 tablespoon of oil over medium-high heat. If using a BBQ, lightly brush the hotplate/grills with oil and heat to medium-high.
  • Place the marinated chicken in the skillet or on the grill. Cook the first side for 4 to 5 minutes or until it develops a nice char. Then, flip the chicken and cook the other side for 3 to 4 minutes, as the second side requires less time.
  • Once the chicken is cooked, remove it from the heat source and cover it loosely with foil. Let it rest for 5 minutes.

How to serve:

  • Slice the cooked chicken and arrange it on a platter alongside flatbreads, salad, and the yogurt sauce (or dairy-free Tahini sauce, if you prefer).
  • To make a wrap, take a piece of flatbread and spread some yogurt sauce on it. Add a bit of lettuce, tomato, and the cooked Chicken Shawarma. Roll up the flatbread and enjoy your delicious wrap!
