Today we’ll take you and your taste buds on a short trip to Kenya where Mandazi, a sweet treat originates from. Mandazi can be served as a simple snack, dessert or together with coffee and tea.
Ingredients:
3 cupsall-purpose flour (375 g), plus more for dusting
sugar (100g)
1 ½ teaspoonsbaking powder
2 teaspoonsground cardamom
½ teaspoon salt
1egg, beaten
coconut milk (400ml)
oil for frying

Let’s get to work!
Whisk the flour, sugar, baking powder, cardamon and salt together in a large bowl.
Form a dwell and mix in the egg and coconut milk using a rubber spatula until the dough comes together.
Flower your kitchen surface and knead the dough until smooth. Part your dough into 4 portions and form circles about half a finger thick. Cut the circles into 8 triangles.
Preheat the oil in a pan until it reaches 180 degrees.
Fry the Mandazi in batches for 2-3 minutes until golden brown, work in batches.
